When it comes to lunch time do you struggle to find healthy, yet tasty options? Is that same-old turkey sandwich getting a little boring? My Spicy Chicken Lettuce Wraps with Pineapple Mango Salsa are the perfect solution to the lunchtime rut! The delicious, fresh pineapple mango salsa along with the spicy chicken flavors are sure to satisfy!
These lettuce wraps are perfect, especially if you pack your lunch for work. I have basically combine two of my favorite recipes; my Spicy Verde Grilled Chicken and my Tropical Pineapple Mango Salsa into one glorious, healthy lunch!
Preparing the chicken and salsa in advance (I like to do this on the weekend), and having it ready to go for the work week is ideal. You can grill the chicken on an outdoor gas or charcoal grill, or simply use a grill pan on your kitchen cook top. When packing these lunches, I like to divide out the salsa and meat into separate containers, and then have the lettuce leaves in their own separate compartment, keeping the wraps extra fresh! I use this really handy lunch container made by Sistema. (The green portion sits on top of the main container for one neatly enclosed packed lunch.)
Once you’re ready to enjoy your lunch, simply assemble with a lettuce leaf (you can use Boston, Bib, Green Leaf, or even Romaine), add a couple slices of chicken, top with the salsa, and then wrap! So long boring turkey sandwich – there’s a new lunch in town!

Ingredients
- 2-4 medium to large lettuce leaves, rinsed (Boston, Bib, Green Leaf or Romaine)
- 4 oz. Spicy Verde Grilled Chicken
- 1/2 c. Pineapple Mango Salsa
Instructions
- In separate resealable containers, add the lettuce leaves, chicken and salsa.
- When ready to eat, use a lettuce leaf, add a couple pieces of chicken and a couple spoonfuls of the salsa. Wrap and enjoy!
