Flufftella Croissants

Flufftella Croissants

Several weeks back, just after school had started, my son came home from school and quickly asked, "Mom, can I have a "Flufftella" sandwich in my lunch tomorrow?"  I said, "Flufftella sandwich?  What is that?"  Harrison then proceeded to tell me that his friend Michael has that for lunch almost every day.  He said, "Mama, it looks so yummy!  It has Nutella and Marshmallow fluff in it.  Get it?... Flufftella!  Can I have one, please?" Well, a few days later we packed him a Flufftella sandwich in his lunchbox.  He was one happy boy! This weekend, I had some croissant roll dough in the fridge and Harrison and I decided that I would be super-yummy to make Flufftella Croissants.  Basically, a warm version of his sandwich using refrigerated crescent roll dough.   These were super easy to Continue Reading...

Slow Cooker September: Overnight Apple Cinnamon Oatmeal

Slow Cooker September: Overnight Apple Cinnamon Oatmeal

I am writing today after a wonderful weekend.  The weather was FINALLY fall-like, in the mid-70's and cool, crisp mornings.  On Sunday morning my 5 year old had his very first flag football game.  The game was at 9am, and despite hot weather of a few days ago, it was only 50 degrees at game time.  The boys did really well, and even had an interception in the game!   Pretty awesome for flag football, lemme tell ya!  I was such a proud Mama!  We had so much fun watching Harrison and his teammates play, and our friends Jeff and Jeanine and their kids came to watch, too.  It made for a great weekend with family and friends.                 While getting ready for the game the night before, I knew we would need to leave Continue Reading...

Dreamy Pumpkin Spice Smoothie

Dreamy Pumpkin Spice Smoothie

Earlier this week I was talking with my blog buddy, Shayla.  She lives in Oklahoma and I live in Virginia, and both of us (as I suspect much of the country) have been melting in the heat.  We are both lovers of fall, and both of us have seen no sign of changing leaves or frost on the doorsteps.  Where is fall, already? Yes, I know...its early September, and fall doesn't really start for another few weeks.  But, come on mother nature, don't you know this is my favorite time of year?  Enough with the hot, humid days.  Bring on the cool, crisp days of fall. Well, Mother Nature may or may not be listening to me, as we have yet another day in the 90's today in Virginia.  I've really been craving the flavors of fall, but just can't bear to turn on my oven, or suck down a hot pumpkin spice Continue Reading...

Fall Favorite Pumpkin Bread

Fall Favorite Pumpkin Bread

Did you know that the meteorological start to fall lands on September 1st?  I know its still a couple weeks away, but that is just one more reason to call an end to the heat sweltering days of summer, usher in the crisp, colorful days of fall and mix up a batch of my delightful Fall Favorite Pumpkin Bread.   Without a doubt, fall is my absolute favorite season - college football, cooler weather, soup and stew for dinner, back to school, and pumpkin bread - all of these things make me so happy and provide such a feeling of warmth, security, friends and family.  What better way to celebrate the meteorological start to fall that making Pumpkin Bread? When September 1st rolls around, I am usually the first in line to get a Starbucks Pumpkin Spice Latte, and a slice of their Continue Reading...

Strawberry Rhubarb Jam

Strawberry Rhubarb Jam

Harrison and I came back to my home town, Burke, SD to visit my family for a couple weeks.  Unlike last summer, they've had lots of rain and sunshine, which has helped the local crops and gardens grow leaps and bounds.  My dad's strawberry patch is no exception.  I've never seen strawberry plants as full and plentiful as these. Dad has picked several gallons of strawberries so far this summer, filling up their freezer for fall and winter.  Since they have a nice sized rhubarb plant, I thought hmmmm, what could we make with copious amounts of strawberries and rhubarb?  Jam!!!  I raided mom's basement pantry of miscellaneous jars, picked up some jar flats, and pectin at the local grocery store, and pulled out the big pot.  In a couple hours we had several jars of sweet, Continue Reading...

Easy Iced Coffee

Easy Iced Coffee

I have to tell you, that I really love coffee.  If it wouldn't keep me up at night, I would drink it all day long!  It's one of my favorite parts of the morning - I walk over to my trusty Tassimo coffee maker and brew me up a nice cup of joe.  However, when it gets hot like it did here yesterday (90 by noon!), I really love nothing more than an iced coffee. Now don't get me wrong, I delight in a great Starbucks iced latte like everyone else, but its not always great on my wallet.  So, I'm gonna fill you in on how to make a fabulous tasting, and super easy iced coffee right at home. A great tip to making iced coffee is using coffee ice cubes.  Making coffee ice cubes is about as simple as it sounds.  Pour some brewed coffee in an ice cube tray, and freeze.  You can use regular Continue Reading...

Pina Colada Smoothie Two Ways: Breakfast or Cocktail

Pina Colada Smoothie Two Ways: Breakfast or Cocktail

In my opinion, nothing says summer like a really great smoothie or shake.  This smoothie delivers excellent texture, flavor, and just the perfect amount of sweetness. This smoothie is ideal for breakfast or a great snack for you and the kids on a hot afternoon.  With just a bit of prep before hand it literally takes about 5 minutes to have this cool, frosty drink in hand. You can also adapt this drink making it a fabulous cocktail and wonderful to sip on the patio at the end of a great summer day. Here's the recipe: [mpprecipe-recipe:10]   You'll find that you don't need any additional sweetener, as the pineapple, banana and coconut do the job. Adaptation for Pina Colada Cocktail: substitute 1 1/2 c. vanilla ice cream, for the greek yogurt add 2-3 Continue Reading...
