Its the Monday after Thanksgiving, and I'm still in a bit of a food coma.  We had family here over the holiday weekend, and still have some turkey to get through.  A bit sick of looking at it, I decided that the holiday baking needs to commence.  I wanted to try something new this year.  After a few test batches, I think I've come up with the PERFECT chocolate/peppermint combo - Peppermint Bark Brownie Bites! These brownie bites are very easy to make, as the recipe utilizes a brownie mix.  Another key component is the Hershey's Peppermint Bark Belles, which are sold at Target.  The belles fit perfectly in the brownie cups, and make for a tasty little bite sized goodie. I don't know about you, but one of my favorite things to snack on is dried cranberries.  I always seem to have a big bag in our pantry and they go especially well with almonds (or white chocolate chips, if I'm really craving something sweet!) Several years ago, I decided to make some oatmeal cookies.  I was going to throw in some raisins, but didn't have any.  I did have dried cranberries and some white chocolate chunks.  And voila!!  There you have it - White Chocolate Chunk Cranberry Cookies! These have come to be one of my favorite cookies to make and have on hand for a snack.  The recipe makes about 3 dozen, so I tend to keep about half out for us to snack on and then freeze the rest. Today was Harrison's final game of the fall football season.  I have to say that I am so tremendously proud of all the boys on the team.  They won a few games during the regular season, and were able to make the playoffs.  With their first game of the playoffs this  morning, they faced off against a very good undefeated team.  They played a really close game, and were leading at half time!  But despite their best efforts, they ran out of time at the end, and lost 13-7.  The boys played really well and in my opinion, had one of their best games of the season. For whatever reason, I don't make cupcakes all that often.  I don't know why - they are super easy to make, clean up, and especially fun to eat.  Today, Harrison had a football game, and unfortunately they lost a really close one.  So once we got home, I said, "Today would be a good day for cupcakes."  Harrison agreed enthusiastically!!  Not too many kids wouldn't.  :) Since Halloween is just around the corner, I thought we should make the cupcakes extra festive.  Luckily, the only extra ingredient I needed to make the "spiderwebs" was already in my fridge - chocolate syrup!  My mom use to do this with a regular sheet cake and vanilla frosting, and everyone would always say how pretty it was.  Truth is, it is so easy to do!  Simply frost your cupcakes as usual, and make a spiral Continue Reading...
