Apple Cider Glazed Pork Chops

Apple Cider Glazed Pork Chops

The Perfect Glazed Pork Chop recipe! The ultimate recipe for glazed pork chops! Coated with an apple cider glaze, and grilled to perfection, these sweet and savory grilled pork chops are perfect any time you're in the mood for meat!   My 6-year-old son Harrison just began the school year, and the start of first grade.  Don't get me wrong, our summer was great, but I was really looking forward to getting back into our regular school year routine.  This is also the second year that Harrison is playing fall flag football, which means two nights a week we have football practice in the early evening.  On those practice nights we tend to have something quick either before or after practice.  On nights we don't have practice, I make it a point to have dinner at the table so we can Continue Reading...

White Pizza with Bacon and Tomatoes

White Pizza with Bacon and Tomatoes

A pizza-lovers dream!  Loaded with cheesy Alfredo sauce and topped with fresh, delicious tomatoes, onions, basil and savory bacon, this pizza is perfect for pizza night or for an easy dinner solution any night of the week! Is it me, or do I have the only kid in America that doesn't eat pizza?  Isn't pizza one of those foods that kids go crazy for?  My husband and I love it, but our 6-year-old son would rather go without eating than grabbing a slice.  Therefore, it has become a small mission of mine to create a pizza that my son will enjoy just as much as his parents. I decided to make a pizza that uses an Alfredo sauce, instead of a red sauce (which is what he says he doesn't like.)  Topped with some seriously delicious toppings: cheese, bacon, red onion, grape tomatoes, and Continue Reading...

Grilled Chicken and Plum Skewers

Grilled Chicken and Plum Skewers

I would say that one of my most-used (and loved) cooking tools is my gas grill.  My husband bought it for me for my birthday a few years ago, and I've been consistently using it about 9-10 months out of the year.  My neighbors tend to see me wheeling out the grill a few nights a week, especially in the summer.  I love grilling up an easy dinner like these Grilled Chicken and Plum Skewers. Perfectly seasoned, this chicken goes wonderfully with the sweet-tart plums.  Once on the grill, these skewers only take about 5-6 minutes per side, before going right to the table to your hungry crew.  The prep is simple, too.  Simply cubing and seasoning the chicken, quartering the plums, and skewering is all you have to do.  This is easily a meal that is on the table in less than 30 minutes. Attention steak lovers - these Grilled Mushroom and Sirloin Skewers are for you!  Marinated in an easy rosemary-shallot marinade, these skewers are a quick and easy dinner option to throw on the grill any night of the week. Sometimes, I'm really in the mood for MEAT!  Growing up in the heartland of South Dakota, beef and pork are consumed on a very regular basis.  There was one time shortly after my husband and I were married, when there was a gathering taking place at my parents house.  My husband joyfully noted that we had had meat at every meal that day.   His response to the carnivorous observation with a huge grin on his face was the response;  "I love your family!" While we certainly don't have meat at every meal here at our house, we definitely enjoy beef a couple Continue Reading...

Grilled Cedar Plank Salmon

Grilled Cedar Plank Salmon

This is one of the most flavorful ways to grill!! My Grilled Cedar Plank Salmon is not only healthy, but tastes amazing, and is very easy to prepare!  It will be your new summer favorite!   Have you ever made and ate a meal and then when finished ask yourself, "Why don't I make this more often?"  That's what I said to myself last night after making this super delicious and easy Grilled Cedar Plank Salmon.   In our house we love eating salmon - its probably from our years living in the pacific northwest, where salmon is very fresh and plentiful.  I eventually learned how to grill using cedar planks, and it couldn't be easier!  The cedar plank gives the salmon a subtle, yet very flavorful smokey flavor.  When using the cedar plank, you don't need a fancy glaze Continue Reading...

Shrimp Rossini Pasta

Shrimp Rossini Pasta

As a Catholic family, we always make it a point to observe the Lenten season.  We refrain from red meat on Fridays, which means a fair amount of fish.  I try to make meals that include fish and seafood year-round, so I've always got a good number of meals ready to go once lent rolls around.  This Shrimp Rossini Pasta is the perfect dish anytime your looking for a great pasta & shrimp dish. I came up with this dish when eating at one of our favorite restaurants; Bertucci's.  I looked all over for a great recipe that mimics their Shrimp Rossini Pasta, but wasn't able to find ANYTHING!  I did the only other thing I knew, and that was to develop my own. The sauce is a Rose type of sauce that includes tomato, white wine and a bit of half and half.  Its not too heavy, and Continue Reading...
