As a Catholic family, we always make it a point to observe the Lenten season.  We refrain from red meat on Fridays, which means a fair amount of fish.  I try to make meals that include fish and seafood year-round, so I've always got a good number of meals ready to go once lent rolls around.  This Shrimp Rossini Pasta is the perfect dish anytime your looking for a great pasta & shrimp dish. I came up with this dish when eating at one of our favorite restaurants; Bertucci's.  I looked all over for a great recipe that mimics their Shrimp Rossini Pasta, but wasn't able to find ANYTHING!  I did the only other thing I knew, and that was to develop my own. Leftovers - love 'em or leave 'em?  I go back and forth all the time.  I mostly love them.  I learned, very early in my life, to cook for a crowd.  I am one of four kids, so growing up I was usually helping cook a large meal that would feed at least six people for dinner.   Portions were large, as my brothers could easily eat enough for two people.  Now that I have a small family (just three of us), I tend to still cook like there are six people in the house.  Over the years, I have learned to gradually scale back the amount of food I cook, but there is usually still way more food for just one meal.  Thus, leftovers! Is it cold outside where you are?  Here in Northern, VA its been pretty cold (at least, for these parts), for a couple weeks now.  Winter doesn't officially start until next week, however, I'm thinking its pretty much here.  Anytime there is a nip in the air, I'm in the mood for soup, stew, chili - basically, a hot meal you eat out of a bowl.  Also, something that goes with a nice, crusty, cheesy piece of bread to sop up all the broth is even better! Do you and your family have Pizza night every once in a while?  As a kid I remember having pizza for dinner was such a treat.  Mostly because it was one of the few times we were allowed to have soda with our meal.  :)  I grew up in a small town, where the only place you could get pizza from the grocery store freezer, or your own oven.  I still really enjoy a good homemade pizza, even though we now live in suburban Washington, DC where you can get a pizza delivered to your house within the hour. Slow Cooker September: Slow Cooker Country Curry Chicken

So, I've had my new slow cooker for about three weeks now, and I've used it at least 10 times.  It really is one of the hardest working appliances in my house, and has saved me hours of meal prep already.  I truly love the fact that I can throw together a meal in the early afternoon, run errands, take my son to football practice and have a hot meal ready to go when we walk through the door.  I am forever grateful to the person that invented this ingenious piece of equipment!
