Have you ever made Whoopie Pies before?  Up until yesterday, I had never made them. Over the weekend, Harrison and I were in Home Goods, where we came upon one of their clearance racks.  There were several cookie sheets, pots and pans, and then I discovered a treasure: a whoopie pie pan!!  AND, it was only $5!!!  Needless to say, I clutched it to my chest, grabbed Harrison and made my way to the check out line. This weekend I planned on bringing some cupcakes to a friends house for a BBQ.  Adults and kids alike, everyone loves cupcakes.  I consulted my 5-year-old son as to what type of cupcakes we should bring - his quick reply was "coconut!" I did some searching, and came across a fabulous coconut cake recipe that I adapted for cupcakes.
