If you're a mom like me, you've likely made a few thousand PB&J sandwiches.  My son has a PB&J in his lunch box several times a week, and I will even have it here at home for a quick lunch.  It is certainly a good, stand-by sandwich, but after a while, it gets a little old.  I've got a sandwich that takes the basics of a PB&J and steps it up a notch.  The Grilled Banana Split Sandwich has chunky peanut butter for a little crunch, Nutella, strawberry jam and bananas!  Served hot, this sandwich is yummy, melty deliciousness! Several weeks back, just after school had started, my son came home from school and quickly asked, "Mom, can I have a "Flufftella" sandwich in my lunch tomorrow?"  I said, "Flufftella sandwich?  What is that?"  Harrison then proceeded to tell me that his friend Michael has that for lunch almost every day.  He said, "Mama, it looks so yummy!  It has Nutella and Marshmallow fluff in it.  Get it?... Have you ever made Whoopie Pies before?  Up until yesterday, I had never made them. Over the weekend, Harrison and I were in Home Goods, where we came upon one of their clearance racks.  There were several cookie sheets, pots and pans, and then I discovered a treasure: a whoopie pie pan!!  AND, it was only $5!!!  Needless to say, I clutched it to my chest, grabbed Harrison and made my way to the check out line. This weekend I planned on bringing some cupcakes to a friends house for a BBQ.  Adults and kids alike, everyone loves cupcakes.  I consulted my 5-year-old son as to what type of cupcakes we should bring - his quick reply was "coconut!" I did some searching, and came across a fabulous coconut cake recipe that I adapted for cupcakes.
