What you’ll need to make these cranberry energy bites:
- Raw almonds – look for almonds that don’t contain any extra oils.
- Rolled Old Fashioned Oats
- Almond Butter – look for a quality nut butter that doesn’t contain any extra oils or added sugar. (Ingredients should just be almonds and salt.)
- Sugar Free Maple Flavored Syrup – I like Lakanto Maple Flavored Syrup.

- No Sugar Added White Chocolate Chips – I like Lily’s No Sugar Added White Chocolate Chips
- Vanilla Extract
- Almond Extract – optional

How do I make ground almonds?
Using a blender or food processor, add the raw almond. Pulse on medium speed until the almonds reach a grainy sand-like consistency. This should take 30 seconds or less.

How do I make energy bites?
Start by grinding the almonds into a coarse, sand-like consistency. You can do this in a blender or food processor, by pulsing for 30-60 seconds. To the ground almonds, you’ll then add all the remaining ingredients to the mixing bowl. Stir together until all the ingredients become well incorporated.

How do I roll energy bites?
Once the dough is mixed together completely, begin rolling each bite into small balls. You’ll need about 1 tablespoon of dough per bite.
The dough sticks together well, so just pressing or rolling together with your hands works the best.

How do I store energy bites?
Energy bites are best stored in the refrigerator or freezer. I like to store mine in one large resealable container in my freezer. I separate the layers of bites with a sheet of parchment paper so they don’t stick together.
You can also refrigerate or freeze in individual servings (2 bites) using plastic containers or freezer bags. Refrigerated, these energy bites will keep for up to 2 weeks. When frozen, they will keep for up to 6 months.
These bites make a great pre or post workout snack, perfect for re-fueling after a run or your favorite gym class.

Ingredients
- 1 1/2 cups raw almonds ground
- 1 1/2 cups old fashioned rolled oats
- 2/3 cup good quality almond butter
- 2/3 cup sugar free maple flavored syrup like Lakanto
- 1/2 cup sugar free dried cranberries
- 1/2 cup No sugar added White Chocolate Chips like Lily’s
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract optional
Instructions
- To a blender or food processor, grind the raw almonds by pulsing until they reach a coarse, sand-like consistency. This should take approximately 30 seconds. Pour the ground almonds into a mixing bowl.
- To the mixing bowl with the ground almonds, add the remaining ingredients: oats, almond butter, maple flavored syrup, sugar free dried cranberries, white chocolate chips, vanilla and almond extracts. Stir together until well combined.
- Using a tablespoon or medium ice cream scoop, spoon out individual bites and roll together using your hands. Place rolled bites onto a piece of parchment or waxed paper.
- Bites can be enjoyed right away. You can also refrigerate or freeze, storing in an airtight container.
