If you’re looking for a simple, fresh and healthy side dish this cucumber tomato salad recipe is the answer. It’s one of those recipes that is quick, easy and goes with just about anything. I personally LOVE tossing this together while I’ve got chicken, salmon, or steaks cooking on the grill.
I also love how light, yet flavorful it is – the cilantro lime dressing is amazing and perfectly complimentary with the tomatoes, cucumbers and avocados.

The ingredients you’ll need to make this simple Avocado Tomato Salad:
- Cucumbers: English or mini-English cucumbers work well, as you don’t have to peel them.
- Cherry or Grape Tomatoes: you can actually use any size or variety of tomato, sliced into bite-sized pieces.
- Pickled Red Onions: you’ll LOVE having these on hand for salads and sandwiches. They are incredibly quick and simple to make – click here for the recipe. You can also use fresh sliced red onion.
For the dressing you’ll need:
- Fresh cilantro
- A lime for fresh lime juice
- Extra Virgin Olive Oil
- Fresh ground Salt and Pepper
Step 2: Slice the cucumbers, avocados, tomatoes and red onion
For the cherry tomatoes, I halve these. If you’re using another larger variety of tomato, simply cut it into smaller slices or pieces. Same with the avocados, cucumbers and pickled (or fresh) red onions.
Step 3: Mix together the cilantro lime dressing
I like to keep cilantro and limes on hand just so I can make this dressing. All you need to do is chop a handful of cilantro leaves, making sure to remove any stems. I also recommend rinsing your cilantro, as it is often sandy or dirty.
To the chopped cilantro, add the juice of one lime and good quality Extra Virgin Olive Oil. Add a bit of fresh ground salt and pepper to taste.
Stir together with a fork, and you’ve got yourself an amazing, fresh dressing!
Step 4: Dress the salad
To the sliced cucumbers, tomatoes, avocados and onions, pour the dressing over the top. Gently toss together so the dressing coats everything well.
Unlike other leafy or lettuce salads, you CAN dress this salad in advance before serving. In fact, the acidity in the lime juice will help prevent the avocado from browning.

Here’s the recipe for my Cucumber Avocado Tomato Salad:
- 1 1/2 c. sliced cucumbers (mini or English work well)
- 1 pint (about 2 cups) cherry tomatoes, halved
- 1 avocado, sliced
- 1/2 c. pickled red onion (or fresh red onion)
For Cilantro Lime Dressing:
- 2 Tbsp. fresh cilantro, chopped
- 2 Tbsp. olive oil
- Juice of 1 large lime (about 2 Tbsp.)
- Salt and Pepper
- In a small bowl, whisk together the dressing by combining the cilantro, olive oil, lime juice, salt and pepper. Whisk and set aside.
- In a large bowl, add the sliced cucumbers, halved tomatoes, sliced avocados and sliced pickled red onions. Pour the dressing over the top, and gently dress the salad. Top with additional fresh ground pepper if desired. Serve right away.
Instead of pickled red onions, you can also use fresh red onion.
Instead of cherry tomatoes you can also use any size or variety of tomato sliced into bite-sized pieces.
Refrigerate any leftovers in an airtight container for up to 3 days.
