An Amazing Grapefruit Salad recipe with Mahi Mahi
Do you love a fresh, crisp entrée salad for dinner on a spring or summer evening? This fantastic Mahi Mahi Salad is a wonderful way to enjoy an entrée salad for lunch or dinner!
Made with citrus glazed mahi mahi filets that can be easily made on your stovetop, this salad also includes crisp yellow bell pepper, celery and pistachios for a wonderful crunch.
Here’s how this delicious grapefruit salad comes together:
How do I make an entrée salad?
First, start by tossing together the salad: spinach mix, grapefruit, pepper, celery and pistachios. Set aside.
Next, mix together the dressing: grapefruit juice, honey, olive oil, garlic, salt and pepper. Set aside.
Next, cook the fish: Sautee in a skillet or grill pan, with salt and pepper to season. Whisk together the glaze: grapefruit juice, honey, brown sugar, garlic, salt and pepper. As the fish cooks, continually coat the fish with the glaze.
Once the fish is done cooking, assemble the salad on plates, dress and toss the salad and top with the cooked fish.
How can you tell when mahi mahi is done?
Mahi mahi has almost no fat, so it will cook rather quickly. Sear for a few minutes on each side over medium-high heat. It will be done when if flakes with a fork and is white in color all the way through.
What does grapefruit taste good with with?
The grapefruit in this salad is absolutely the star of the dish! Not only does it pair perfectly with the spinach, yellow bell pepper, celery and pistachios, its a wonderful way to liven up an ordinary salad with some lovely color and flavor.
I also used fresh squeezed grapefruit juice to make the dressing for the salad, which adds a fantastic complimentary flavor to the salad.
Where do I get mahi mahi?
The frozen food section of your grocery store is usually the best, most economical place to get mahi mahi. I’ve also found that Costco has the best price when it comes to mahi mahi, wild caught salmon and raw shrimp.

Grapefruit and Spinach Salad with Glazed Mahi Mahi
Tossed with delicious Florida Red Grapefruit along with spinach, yellow bell peppers and pistachios, and topped with a grapefruit glazed, pan seared Mahi Mahi, this salad is fresh, healthy and fabulous!
Ingredients
- [b]For Salad:[/b]
- 1 bag of baby spinach/arugula blend
- 1 whole Florida Red Grapefruit, sectioned
- 1/2 yellow bell pepper, sliced
- 1 stalk celery, sliced
- 1/4 c. pistachios, chopped
- [b]Dressing:[/b]
- juice of 1/2 Florida Red Grapefruit (about 1/3 to 1/2 cup)
- 1 1/2 Tbsp. honey
- 1 1/2 Tbsp. olive oil
- clove of garlic, minced
- salt & pepper to taste
- [b]Fish and Glaze:[/b]
- 2 large Mahi Mahi Fillets
- 2 Tbsp. olive oil (for pan)
- salt & pepper (to taste)
- juice of 1/2 Florida Red Grapefruit (about 1/3 to 1/2 cup)
- 1 Tbsp. honey
- 1 Tbsp. brown sugar
- 1 clove garlic, minced
- salt & pepper to taste
Instructions
- In a large mixing bowl, add the spinach/arugula blend, and toss in the grapefruit sections, yellow pepper, celery and pistachios. Set aside.
- In a small bowl mix together the dressing, by combining the grapefruit juice, honey, oil, garlic, salt and pepper. (Set aside - Wait to dress the salad until just before ready to serve.)
- Mix glaze in small bowl by whisking together the grapefruit juice, honey, brown sugar, garlic and salt & pepper. In a large skillet, heat the olive oil on medium high heat. Pat the fish fillets dry with paper towels, and add a bit of salt and pepper to taste. Let sear for 3-4 minutes. Flip over to other side, and pour the glaze over the top of each fillet. As the fish cooks for the final 3-4 minutes on second side, continually spoon the glaze over the fish. Remove fish from heat at serve with the dressed salad. Enjoy right away.
