Easy & Healthy Chicken Salad without Mayo
Most fast-food and store-bought chicken salad recipes are made with loads of mayonnaise, making them rather heavy and greasy. Now, you can make your favorite on the healthier side and keep all the flavor and freshness.
Much like my Greek yogurt tuna salad and Healthy Egg Salad recipes, this healthy chicken salad recipe is made with Greek yogurt. A great alternative to mayo, which is loaded with better ingredients giving you more flavor and crunch.
This chicken salad also has yummy grapes, mandarin oranges and crisp almonds, making it super flavorful and delicious!
What do I need to make no mayo chicken salad?
Here’s a quick-reference checklist of the ingredients you’ll need to make this chicken salad:
- Cooked chicken – I like to buy pre-cooked rotisserie chicken at Costco. This helps save time and already comes pulled. Check out the 15 Things I Buy at Costco for Healthy Meals and Snacks.
- Lemon juice – this helps preserve the flavor and adds a nice tanginess to the chicken salad.
- Greek yogurt – this takes the place of the traditional mayo or sour cream that is normally used in chicken salad. It still provides great creaminess without the heavy, oily texture.
- Green onion – adds some nice flavor and crunch.
- Celery – some would argue it’s not chicken salad without celery. Slice finely and/or dice for ideal texture and crunch.
- Red grapes – red grapes will offer some welcome sweetness to the salad. You can also substitute green grapes if you prefer.
- Mandarin oranges – fantast for a pop of orange color, oranges also provide some nice sweetness to the flavor. When buying, look for oranges that are packed in water, and drain before using.
- Sliced almonds – almonds will add a restaurant-quality look to your salad. It also adds a great texture and crunch.
