I am writing today after a wonderful weekend. The weather was FINALLY fall-like, in the mid-70’s and cool, crisp mornings. On Sunday morning my 5 year old had his very first flag football game. The game was at 9am, and despite hot weather of a few days ago, it was only 50 degrees at game time. The boys did really well, and even had an interception in the game! Pretty awesome for flag football, lemme tell ya! I was such a proud Mama! We had so much fun watching Harrison and his teammates play, and our friends Jeff and Jeanine and their kids came to watch, too. It made for a great weekend with family and friends.
While getting ready for the game the night before, I knew we would need to leave a little early and I knew it would be chilly. I also knew we would be a little rushed getting out the door, but I wanted everyone to have a warm, healthy breakfast. With this in mind, I pulled out my Slow Cooker, and grabbed the ingredients for Overnight Slow Cooker Oatmeal. This would be the perfect breakfast, as it would be ready to go right away, feed all of us, and get our tummies ready for the game.
Earlier in the day I had picked up several honey crisp apples from the farmers market, which I knew would be perfect in the oatmeal. The oatmeal comes together in just a few minutes the night before. When you wake up in the morning it is literally ready to dish up when you hit the kitchen. The oatmeal smells amazing, with the cinnamon, nutmeg and apples cooking up as you sleep.
Here is everything you need for a hot, healthy breakfast that is perfect for any busy morning:
Overnight Slow Cooker Apple Cinnamon Oatmeal

Ingredients
- 4 c. water
- 1 1/2 c. apple juice or apple cider
- 2 c. steel cut oats (I like Bob's Red Mill)
- 1/2 tsp. cinnamon
- 1/2 tsp. ground nutmeg
- 1/4 tsp. salt
- 2 large apples, peeled and diced into chunks
- For Toppings:
- Brown Sugar
- Milk or Half and Half
- Glazed Pecans
Instructions
- In your slow cooker, spray with non-stick cooking spray. (Don't skip this step - your oatmeal will really stick to your slow cooker and may scorch at the bottom.) Add all ingredients and stir. Place the lid on the slow cooker, and cook for 6-7 hours on low. Once done, stir before serving. Add toppings of your choice.
