This Starbucks pumpkin spice cold brew is made with simple ingredients that take just minutes to make. Not only will you save yourself some calories, you’ll save some money in the process as well.
What do I need to make a Starbucks Pumpkin Spice Cold Brew at home?
For this post I’ll give you both a classic / Starbucks version and a skinny option.
Classic recipe:
- Cold Brew Coffee
- Whole Milk
- Heavy Cream
- Brown Sugar
- Pumpkin Puree
- Pumpkin Pie Spice
Skinny recipe:
- Cold Brew Coffee
- Skim Milk – you can also use your preference of plant-based milk, but it may affect how much it foams.
- Swerve Brown Sugar Substitute
- Pumpkin Puree
- Pumpkin Pie Spice

How do I make a pumpkin spice cold brew at home?
- Making this classic cold brew drink at home is very simple. Start by combining the milk, cream, brown sugar, pumpkin puree and pumpkin pie spice in a bowl or measuring cup. Whisk together until smooth and combined.
- Froth the milk mixture. This will make it foamy and creamy.
- Fill a glass with ice and cold brew coffee, leaving about an inch of head space at the top.
- Pour the pumpkin spice cream over the top of the iced cold brew. Enjoy right away while cold and creamy.
Equipment options for frothing milk:
- Milk frother – there are many economical milk frothers on the market. The one above is the Nespresso Aeroccino Milk Frother and does a great job frothing and heating milk for lattes, cappuccinos and this cold brew coffee. This frother also comes in handy to make my Chai Tea Latte recipe.
- Blender – if you don’t have a milk frother available, you can use a blender. A blender will make quick work of whipping up a frothy cream for your cold brew.
- Mason Jar with tight fitting lid – if you don’t have either pieces of equipment, no worries. By using a simple mason jar, with a well-sealed lid, you can vigorously shake your milk mixture to create a wonderfully frothy cream for your cold brew.

To make a pumpkin cold brew, you’ll need cold brew coffee, whole milk, cream, brown sugar, pumpkin puree and pumpkin pie spice.
To reduce the calories of a traditional pumpkin cream cold brew, replace the sugar with a granular monk fruit sweetener and substitute the cream with skim milk.
The ingredients in a Starbucks pumpkin cream cold brew include cold brew coffee, ice, vanilla syrup, pumpkin cream cold foam and pumpkin spice topping.
For a medium / grande, 16 oz Starbucks pumpkin cream cold brew, there are 250 calories, 31 grams of sugar and 12 grams of fat.
Making it skinny:
- When making this pumpkin cold brew skinny, you’ll replace a couple of ingredients. First, instead of regular brown sugar you’ll need either Swerve Brown Sugar Substitute or another monk fruit or erythritol sweetener. Whole Earth granular monk fruit sweetener or Vanilla Sweet Cream drops would be good options.
- The second substitute will be skim milk instead of whole milk and cream. Your pumpkin cream will be a little thinner than the other classic version, but that’s because there is almost no fat. The flavor is still fantastic!

Making it classic:
When making your pumpkin cold brew with traditional ingredients, you’ll have a super thick and creamy pumpkin cream to top your cold brew. Here are a few things to note:
- For a classic recipe, you’ll need whole milk and heavy cream. You can use all whole milk, or substitute the heavy cream for half and half, if needed. The fat in these two products will give you a very rich, creamy pumpkin cream topping.
- For the classic option, I’ve listed 2 tablespoons of brown sugar. You can cut this in half if you prefer a less sweet pumpkin cream option.

Starbucks Pumpkin Spice Cold Brew
Equipment

Ingredients
- 1 cup cold brew coffee
- 1/4 cup whole milk
- 1/4 cup heavy cream
- 2 Tablespoons brown sugar
- 1 Tablespoon pumpkin puree
- 1/4 teaspoon pumpkin pie spice
Instructions
- Fill a glass with ice and pour cold brew coffee over ice.
- In a separate bowl, whisk together the milk, cream brown sugar, pumpkin and pumpkin pie spice. Make sure brown sugar is completely broken apart and dissolved in the mixture.
- Pour milk mixture into frother or blender and froth for 30-60 seconds or until your desired creaminess is achieved. Pour over coffee. Enjoy right away while cold.
