– 1 lb. chicken breasts (you can also use thighs, drumsticks or quarters) For marinade: – 1/2 c. balsamic vinegar – 1/3 c. olive oil – 3 Tbsp. brown sugar – 2 tsp. minced garlic – 1 tsp. ground pepper – salt, optional
Heat grill to medium-high. Treat grill grates with olive oil, or non-stick grilling spray. Place chicken skin-side down over indirect heat, and grill approximately 6 minutes (per side.)
Once you turn the chicken, brush with the reserved balsamic marinade, and let it cook for its final 6 minutes.
This balsamic grilled chicken is excellent in salads and great for meal prep! Can be served hot or cold.
