Black Bean Brownie Recipe

– 1 (15 oz) can, black beans, drained and well rinsed – 3 large eggs – 1/2 c. maple syrup – 1/3 c. coconut oil (I use flavorless) – 1/4 c. cocoa powder – 1 tsp. vanilla – 1/4 tsp. salt – 1/2 c. good quality mini-chocolate chips, divided

INGREDIENTS

Step 1

Preheat oven to 350 degrees. Lightly spray an 8x8" pan with non-stick baking spray (I use coconut oil spray.) Set prepared pan aside.

Step 2

To your blender, add the rinsed beans, eggs, maple syrup, coconut oil, cocoa powder, vanilla and salt. Blend well for 45-60 seconds or until ingredients are a very smooth consistency.

Step 3

Set aside 2-3 tablespoons of the mini-chocolate chips. Add the remaining chocolate chips to the batter and fold in. Pour batter into prepared pan, and top with the remaining chocolate chips.

Step 4

Bake for 30-34 minutes - I discovered that 32 minutes is the sweet spot. Before removing from the oven test brownies for doneness by inserting a toothpick into the center. If the toothpick comes out clean and crumb-free, the brownies are done.

Step 5

Remove from oven and let cool to room temperature before slicing. Enjoy
