Blueberry Sour Cream Coffee Cake Recipe

– 3/4 cup sour cream – 3/4 cup granulated sugar – 1/2 cup vegetable oil – 1 egg – 1 teaspoon vanilla extract – 1 1/2 cup all purpose flour – 1 1/2 tsp. baking powder – 1/2 teaspoon salt – 1 cup blueberries

INGREDIENTS! 

Step 1: Combine Wet & Dry Ingredients

In separate bowls, combine the wet and dry ingredients. Whisk in the dry ingredients to the wet. Batter will be thick.

Step 2: Coat Blueberries in Flour

To prevent the blueberries from sinking to the bottom of the cake, coat in flour. Gently fold into the batter.

Step 3: Spread batter into pan

Using a rubber scraper, spread the batter into an 8 x 8" pan.

Step 4: Top with Streusel Crumble

You need just 3 ingredient to make crumble: flour, brown sugar and melted butter. Sprinkle over the top of the batter. Bake at 350 for 40-45 minutes.

Step 5: Drizzle with Glaze

Once the coffee cake comes out of the oven, let cool for 15 minutes. Mix together the powdered sugar and milk to create a glaze, and drizzle over the top of the coffee cake.
