Delicious Chicken and Mango Salad


– 5 cups romaine lettuce – 1 cup fresh mango – 3/4 cup cherry tomatoes – 1 avocado – 1/2 cup red onion – 1/3 cup sliced almonds – 1/3 cup goat cheese – 16 oz. grilled chicken – 1/2 cup honey balsamic dressing


Step 1: Add lettuce to large bowl

To a large salad bowl, add in the romaine lettuce.  You can also use spring mix, spinach mix or even kale.

Step 2: Add in extra ingredients

To the lettuce, add in the mango, onions, cucumbers, tomatoes, avocado and sliced almonds.

Step 3: Add the grilled chicken

My Brown Sugar Balsamic Grilled chicken pairs perfectly with this salad. You can use any pre-cooked chicken.

Step 4: Add goat cheese crumbles

Mild goat cheese crumbles are great in this recipe. You can substitute blue cheese or even feta in this salad.

Step 5: Add dressing

Just before serving, add the dressing and toss together. I recommend my honey balsamic salad dressing.
