Cranberry Apple Quinoa Salad

– 5 oz. Spring mix greens – 1 1/2 cups quinoa, cooked  – 1 cup celery, sliced  – 1 cup apple, diced – 1/3 cup dried cranberries – 1/3 cup pecan halves – 1/4 cup green onions, sliced

INGREDIENTS

Step 1: Add Greens to Large Bowl

To a large salad bowl, add the Spring Mix. You can also use arugula, baby spinach or Red leaf lettuce.

Step 2: Add other ingredients

To the greens, add the chopped apple, cooked quinoa, celery, cranberries, sliced onions and pecans.

Step 3: Mix the Vinaigrette Dressing

Here's what you'll need: – 1/4 cup apple cider vinegar – 2 Tbsp. honey – 2 Tbsp. Dijon mustard – 2 Tbsp. Olive oil – 1/4 tsp. garlic powder – 1/4 tsp. garlic salt – 1/4 tsp. ground pepper

Just before serving, pour the dressing over the top of the salad. Toss together to coat ingredients well.

Step 4: Dress the Salad

Extras: Try adding blue cheese or goat cheese crumbles, or swap pistachios for the pecans.

Excellent as a fall-inspired lunch or a fresh, crisp Thanksgiving side salad!
