Cranberry  Salad  Recipe


– 2 (5 oz. bags) Spring Mix or your preferred lettuce mix – 1 (15 oz) can., mandarin oranges, drained – 1 1/2 c. fresh cranberries – 2 Tbsp. fresh squeezed orange juice (juice of 1/2 orange) – 2 Tbsp. granular monk fruit sweetener – 2 green onions, sliced – 2 ribs of celery, sliced – 1/2 c. toasted pecans – 1/4 c. goat cheese crumbles



Honey Balsamic Dressing: – 1/4 c. olive oil – 1/4 c. balsamic vinegar – 1/4 c. fresh squeezed orange juice (juice of 1/2 orange) – 1 Tbsp. orange zest (zest of 1/2 orange) – 1 Tbsp. honey – 1 tsp. minced garlic (about 2 cloves) – Salt and Pepper to taste


Step 1: Heat cranberries

To a microwave safe bowl, add the fresh cranberries, 2 Tbsp. of orange juice and 2 Tbsp. of granular sweetener.

Step 2: Burst cranberries

Stir together and microwave on 1 minute increments until the cranberries burst. Two minutes will likely be all that is needed to cook the cranberries. Set cranberries aside to cool.

Step 3: Add salad ingredients

In a large bowl or platter, add the spring mix/salad greens, oranges, green onions, celery, pecans and cooled cranberries.

Step 4: Top and refrigerate

Top with the goat cheese crumbles. Refrigerate until ready to serve.

Step 5: Prepare dressing

Prepare dressing and serve on the side or dress the salad just before serving.
