Cucumber Tomato Avocado Salad


– 1 1/2 c. sliced cucumbers (mini or English work well) – 1 pint (about 2 cups) cherry tomatoes, halved – 1 avocado, sliced – 1/2 c. pickled red onion (or fresh red onion) For Cilantro Lime Dressing: – 2 Tbsp. fresh cilantro, chopped – 2 Tbsp. olive oil – Juice of 1 large lime (about 2 Tbsp.) – Salt and Pepper


Step 1

In a small bowl, whisk together the dressing by combining the cilantro, olive oil, lime juice, salt and pepper. Whisk and set aside.

Step 2

In a large bowl, add the sliced cucumbers, halved tomatoes, sliced avocados and sliced pickled red onions.

Step 3

Pour the dressing over the top, and gently dress the salad.

Step 4

Top with additional fresh ground pepper if desired. Serve right away.

Step 5

Refrigerate any leftovers in an airtight container for up to 3 days.
