Healthy Blueberry Pancakes


– 3/4 c. oat flour – 1/4 c. unflavored collagen protein – 2 Tbsp. granular monk fruit sweetener, like Lakanto – 2 tsp. baking powder – 1/2 tsp. salt – 1 c. almond milk (or your preferred milk) – 1 egg – 3 Tbsp. unflavored coconut oil + more for griddle if necessary – 1 tsp. vanilla extract – 1 c. fresh or frozen blueberries


Step 1

In a mixing bowl, whisk together the dry ingredients; flour, collagen, baking powder, sweetener and salt.

Step 2

Add in the milk, egg, vanilla and oil. Whisk together until batter is almost smooth. It's okay if there are a few lumps.

Step 3

Heat a griddle or frying pan over medium heat. Add a drizzle of coconut oil (avocado oil is also good) if your pan is not non-stick.

Step 4

Pour out 4" pancakes on the hot pan, and drop in blueberries to each pancake. Let pancakes cook until bubbling through and underside is golden brown.

Step 5

Flip pancakes to cook on opposite side and cook for 1 minute more or until golden brown. Serve hot right away.
