Healthy Egg Salad

– 2 hard-boiled eggs, chopped – 1 Tbsp. yellow mustard – 1 Tbsp. plain Greek yogurt – 1/4 tsp. salt – 1/4 tsp. pepper

INGREDIENTS

Step 1

In a bowl, add the chopped hard-boiled eggs.

Step 2

Add the mustard, yogurt, salt and pepper.

Step 3

Stir together to incorporate all ingredients.

Step 4

Add to bread to make an egg salad sandwich, or romaine lettuce leaves for lettuce wraps.

RECIPE NOTE

Be sure to NOT use vanilla yogurt. Plain Greek yogurt is recommended.
