Healthy Green Bean Casserole Recipe

– 1 1/2 lb. fresh green beans, trimmed – 10 oz. mushrooms, sliced – 1/3 c. shallots, thinly sliced – 1/4 c. cooking sherry – 3 Tbsp. butter, divided – 1 tsp. dried thyme – 1/2 tsp. salt – 1/2 tsp. pepper

INGREDIENTS

Step 1: Add Green Beans

In a large skillet, add the trimmed green beans with approximately 3 cups of water. Over medium heat, bring to a simmer and steam the beans for 5 minutes.

Step 2: Remove Beans

Remove beans from skillet and transfer to a bowl and cover to keep warm. Drain water from skillet.

Step 3: Saute Mushrooms

In same large skillet, add 2 tablespoons of butter and saute the mushrooms for approximately 5 minutes, Add the shallots and saute for 2 more minutes. Add sherry and saute for 2 more minutes, until evaporated.

Step 4: Add Butter

Add the last tablespoon of butter. Add back the steamed green beans and saute for two more minutes. Season with thyme, salt and pepper.

Step 5: Serve

Transfer to a serving plate and enjoy right away while warm.
