Italian Grilled Chicken Recipe


– 1 1/2 lbs. chicken (breasts, legs or thighs) Italian Chicken Marinade: – 1/2 c. olive oil – 1/4 c. red wine vinegar – juice of 1 lemon – 1 tsp. minced garlic – 1 tsp. garlic powder – 1 tsp. dried oregano – 1 tsp. dried basil – 1/2 tsp. crushed red pepper flakes – 1/2 tsp. garlic salt – 1/2 tsp. pepper


Step 1

In a bowl, whisk together the marinade/dressing. You can also place all of the ingredients into a mason jar, with a tight fitting lid, and shake together.

Step 2

Place your chicken pieces (you can use a whole, cut chicken, breasts, legs or thighs) into a resealable plastic bag. You can also place the chicken in a shallow baking dish. Pour the marinade over the chicken pieces, and make sure everything is well covered by the marinade. Refrigerate for 2 - 24 hours.

Step 3

When ready to grill, preheat grill. Lightly oil grill grates to prevent chicken from sticking. Place the chicken over indirect heat. Discard all remaining marinade.

Step 4

Grill the chicken for approximately 6 minutes per side, for breasts, 4 minutes per side for thighs and 10 minutes per side for bone-in legs. Chicken is done cooking when juices run clear when cutting.

Step 5

Rest chicken for 5 minutes before slicing and serving.
