Russet potatoes, peeled and cut into 1" pieces – 1 tsp. salt – 4 oz. cream cheese (1/2 of 8 oz. pkg) – 1/2 cup sour cream – 1/2 cup half and half – 1/2 cup shredded Parmesan cheese, plus more for topping – 4 Tbsp. butter, melted – 1/2 tsp. salt – 1/4 tsp. pepper – Minced parsley or chives for garnish, if desired
To the hot potatoes, add the cream cheese, sour cream, half and half, shredded Parmesan, and melted butter.
Mash with a potato masher until added ingredients are melted and the potatoes are creamy and fluffy.
