– 1 lb. large, raw shrimp, rinsed and tails removed – 1 medium green bell pepper, thinly sliced – 1 medium red bell pepper, thinly sliced – 1 medium yellow bell pepper, thinly sliced – 1 medium red onion, thinly sliced (or 1/2 of large onion) – Juice of 2 limes (about 1/4 cup of fresh juice) – 2 Tbsp. Extra virgin olive oil Seasoning: – 2 tsp. chili powder – 1 1/2 tsp. cumin – 1 tsp. smoked paprika – 1 tsp. garlic salt – 1/2 tsp. ground pepper
In a small bowl, combine the chili powder, cumin, paprika, garlic salt and pepper. Stir together and then sprinkle over the top of the coated vegetables and shrimp. Using your hands, toss all ingredients together until well coated. Spread into an even layer on the pan.
