Banana Protein Muffins

– 2 cups oat flour – 1/2 cup vanilla protein powder – 1 Tbsp. granular monk fruit sweetener – 1 teaspoon baking powder – 1 teaspoon vanilla extract – 1/4 teaspoon salt – 2 large ripe bananas, mashed – 1 cup almond milk – 1/2 cup plain Greek yogurt – 1 large egg – 2/3 cup no sugar added chocolate chips

INGREDIENTS

Step 1: Mix Dry Ingredients

In a large mixing bowl, combine the dry ingredients; oat flour, protein powder, sweetener, baking powder and salt. Whisk together to combine.

Step 2: Mix Wet Ingredients

In a smaller mixing bowl, combine the wet ingredients; mashed bananas, milk, Greek yogurt and egg. Whisk together well.

Step 3: Mix Batter

Mix the wet and dry ingredients together until smooth. Fold in 1/2 cups of the chocolate chips into the batter.

Step 4: Add batter to muffin pan

Using a ladle or large ice cream scoop, fill each muffin cup nearly full. Top each muffin with the remaining chocolate chips.

Step 5: Bake Muffins

Bake muffins at 350 degrees for 28-30 minutes or until toothpick inserted into a muffin comes out clean and crumb-free. Remove from oven and let cool before serving.
