Watermelon Cucumber Salad

– 5 Mini Cucumbers or 1 large English Cucumber, sliced – 3 cups seedless watermelon, cubed – 3 cups cantaloupe, cubed – 2 green onions, chopped Dressing: – 1/4 c. white vinegar – juice of 1 lime (about 1/4 c.) – grated peel of 1 lime (about 1 Tbsp.) – 1 Tbsp. avocado oil – 1 Tbsp. grated fresh ginger root – 2 cloves of garlic, minced – 1/2 tsp. salt – 1/2 tsp. pepper

INGREDIENTS

Step 1

In a large bowl, combine the cucumbers, melons and onion.

Step 2

Toss to incorporate.

Step 3

In a small bowl, whisk together the dressing ingredients (vinegar, lime juice and peel, oil, ginger, garlic, salt and pepper).

Step 4

Pour dressing over the melon mixture and toss to coat.

Step 5

Serve right away. Store any leftovers in an airtight container for up to 3 days.
