– 1 1/2 c. shredded zucchini (about 1 medium zucchini) – 3/4 c. brown sugar – 1/2 c. vegetable oil – 2 eggs – 1 tsp. vanilla – 1 c. all-purpose flour – 1/2 c. cocoa powder – 1/2 tsp. baking soda – 1/2 tsp. salt – 1 c. semi-sweet chocolate chips
Preheat oven to 350 degrees. Line a 9x5" loaf pan with parchment paper. Set aside. Pro-Tip: It's super helpful to use binder clips to help secure the paper to the pan. When pouring in the batter, the paper will stay in place. Remove clips before baking.
Shred the zucchini using the smallest grater. Press out any excess water from the zucchini through a fine-mesh sieve.
Mix the wet and dry ingredients separately in separate bowls.
Mix together the wet and dry ingredients together. Use a rubber scraper to mix the ingredients well. Batter will be thick. Fold in the chocolate chips.
Pour the batter into lined pan. Top the batter with additional chocolate chips.
Bake at 350 for 55-60 minutes.
Remove from oven, and let cool to room temperature. Slice and enjoy right away.
