Pour the batter into the prepared pan, filling the cups nearly full. Top each muffin with the reserved chocolate chips.
Choose a chocolate chip or chocolate chunk that has minimal refined sugar to keep the muffins on the healthier side. I like Lily's, Lakanto and Hu Kitchen chocolate chunks.
Bake at 350 degrees for 18-20 minutes. Remove from oven and let cool for at least 10 minutes before enjoying.
These muffins are made without oil, flour or refined sugar, making them much healthier than a bakery or coffee shop muffin.
