A healthy, easy & delicious lunch you’ll love! For lunch I typically have something here at home. Just like the rest of the world, I’ve got about 8 different things going on at the same time, deadlines to manage and a kids’ schedule that would make a CEO blush. The sad truth is that if I don’t stop for a few minutes and make myself a good lunch, I tend to make poor food choices later in the day (unhealthy drive thru food or copious amounts of brownies!). Having these Bumble Bee Prime Fillet Albacore Tuna Single Serve pouches on hand at home is the perfect solution for a quick, healthy and delicious lunch option. My favorite is the Jalapenos & Olive Oil flavor, but they also come in Sun dried Tomatoes & Olive Oil and Chipotle & Olive Oil flavors. I love the fact that these are already seasoned and flavored so they’re ready to go whenever you are. These are available in 2.5oz pouches or 5oz cans. Paired with cool, crisp summer veggies, these lettuce wraps are the perfect lunch for a hot summer day. In my lettuce wraps, I paired the savory, spicy tuna with sliced cherry tomatoes, sliced matchstick green, yellow and red bell peppers and a bit of cilantro for some delicious freshness. I used Boston lettuce leaves, but you could also use iceberg or romaine leaves as well. To keep my lunches quick and easy, I’ll keep a container of chopped veggies in the fridge and ready to go. When I’m ready for lunch its simply a matter of pulling a Bumble Bee Tuna Single Serve Tuna pack out of the pantry, taking out my veggies from the fridge and building my lettuce wraps. So simple, so delicious! Here’s the easy, delicious recipe for these Spicy Tuna Lettuce Wraps:
- 1 Single-Serve Bumble Bee Prime Fillet Albacore Tuna Jalapenos & Olive Oil packet
- Boston lettuce leaves
- green, yellow & red peppers, cut into strips
- red & yellow cherry tomatoes, quartered
- cilantro leaves
- Rinse and prepare lettuce and vegetables.
- Build the wraps by placing 3-4 pepper strips, tomatoes and a few cilantro leaves and top with about 1 tbsp of the tuna. Wrap sides of lettuce over the veggies and tuna and enjoy right away.
These make the perfect summer lunch option. These are great to take to work – simply pack your veggies, along with a Bumble Bee tuna pack, and assemble whenever you’re ready for lunch. Best of all these are super healthy – loaded with fiber, vitamins, minerals and the tuna is an excellent source of protein.
