With just 115 calories a slice, this Lemon Blueberry Loaf can't be beat!

Ingredients You'll Need:

– 2 c. + 2 tbsp. flour – 1/3 c. granular sweetener – 1 1/2 tsp. baking powder – 1/2 tsp. baking soda – 1/4 tsp. salt – 3/4 c. plain Greek yogurt – 3/4 c. almond milk – 2 eggs – 2 tsp. coconut oil – 1/4 c. fresh lemon juice – 1 Tbsp. lemon zest – 1 c. fresh blueberries

To mix the batter, start by whisking the dry ingredients. Next add the wet ingredients and whisk well until smooth. Fold in the blueberries.

Line a 9x5" loaf pan with parchment paper. Pour in the batter, and top with extra blueberries.

Bake at 350 degrees for 55 minutes. Once done baking, let cool to room temperature before frosting.

Once cooled, add the lemon glaze and top with extra lemon zest and blueberries for a pretty garnish.

Lemon Glaze: -1 c. Swerve Powdered Sugar Substitute - juice of 1/2 lemon

Slice, serve & enjoy! Fantastic with coffee or tea!
