These Lemon Raspberry Mimosas are made with fresh raspberries, limoncello liqueur, and topped off with a Champagne Rosé. The perfect limoncello mimosas!

Equipment

  • Champagne Flutes If you love champagne or champagne cocktails, these beautiful flute glasses are a must. A great price, too!
  • Citrus Zester This OXO citrus zester is my favorite tool for easily zesting lemons, limes and oranges.

Ingredients
  

  • 1 oz. lemoncello liqueur chilled
  • 4-5 fresh raspberries
  • 2 oz. Rosé Champagne chilled
  • lemon zest 4-6 small strips

Instructions
 

  • In a champagne flute, add 4-5 fresh raspberries. Add the limoncello liqueur over the top of the raspberries. Pour the Rose Champagne over the top of the raspberries and limoncello. Top with lemon zest strands for garnish. Enjoy right away while cold.

Notes

The lemon zest is optional. You could also garnish the drinks with fresh lemon wedges or slices.
The drinks are best made fresh just before enjoying.
