Cucumber Tomato Avocado Salad

There are few salads easier to make than this Cucumber Tomato Avocado Salad. Made with a simple, fresh cilantro lime dressing, this cucumber tomato salad recipe is the perfect healthy side dish for just about any meal!

- 1 1/2 cups sliced cucumbers mini or English work well
- 1 pint about 2 cups cherry tomatoes, halved
- 1 avocado sliced
- 1/2 cup pickled red onion or fresh red onion
For Cilantro Lime Dressing:
- 2 Tablespoons fresh cilantro chopped
- 2 Tablespoons olive oil
- Juice of 1 large lime about 2 Tbsp.
- Salt and Pepper
In a small bowl, whisk together the dressing by combining the cilantro, olive oil, lime juice, salt and pepper. Whisk and set aside.
In a large bowl, add the sliced cucumbers, halved tomatoes, sliced avocados and sliced pickled red onions. Pour the dressing over the top, and gently dress the salad. Top with additional fresh ground pepper if desired. Serve right away.
I use and love my Homemade Pickled Onions, which are fantastic in this salad. Instead of pickled red onions, you can also use fresh red onion.
Instead of cherry tomatoes you can also use any size or variety of tomato sliced into bite-sized pieces.
Refrigerate any leftovers in an airtight container for up to 3 days.
