Chocolate Chip Peanut Butter Oatmeal Bars

Need a new healthy snack option? These chocolate chip peanut butter oatmeal bars are a great make-ahead snack. Just 5 ingredients and no refined sugar!

  • Preheat oven to 350 degrees. Lightly spray a 9x9" square pan with non-stick baking spray. Set aside.
  • In a mixing bowl, mash the ripe bananas well. Add in the peanut butter and vanilla and whisk together to combine.
  • Add in the oatmeal and 1/3 cup of the chocolate chips (reserve the remaining chocolate chips for the topping). Mix together with a rubber scraper.
  • Pour the batter into the prepared pan, and spread evenly. Top with the remaining chocolate chips.
  • Bake at 350 degrees for 18-20 minutes or until bars are golden brown.
  • Remove from oven and let cool for 15-20 minutes before cutting into 16 squares.

Notes

Storage: store any leftovers in an airtight container. These can be kept at room temperature, but will only last 1-2 days. For best results, store in the refrigerator in an airtight container. Refrigerated, will keep for 7-10 days.
Freezing: store in a freezer bag or airtight freezer container. Will keep frozen for up to 3 months. To thaw, reheat in the microwave for 30-45 seconds per bar. A large batch can also be thawed at room temperature overnight or in the refrigerator for 24 hours.
