Looking for a quick and simple dinner or lunch idea? These beef quesadilla tacos are fantastic! Made with just seasoned ground beef, cheese and tortillas, this beef quesadilla recipe comes together in just minutes.
Heat a large skillet over medium heat. Add one of the tortillas to the center of the skillet. Add the warm seasoned ground beef to the top of the tortilla. Evenly sprinkle the shredded cheese over the top of the ground beef.
Place the second tortilla over the top of the ground beef and cheese. Heat for 3-5 minutes on the first side.
Using a large spatula, flip the quesadilla over to the other side. Cook on the opposite side for another 3-5 minute for the cheese to melt and for the tortilla to become crispy.
Once done, transfer to a cutting board and slice into quarters. Enjoy right away while warm. Top with your favorite Tex-Mex toppings and dips.

Quesadillas will keep for up to 5 days refrigerated.Reheating: Reheat in a toaster oven or in a hot skillet for a few minutes on each side over medium heat. Microwaving will cause the quesadillas to become very soggy.
