Love the flavors of coconut and white chocolate? This coconut fudge recipe brings all those flavors together. Made with macadamia nuts, flake coconut and white chocolate chips, this fudge easily comes together in the microwave.
Line an 8 x 8 pan with aluminum foil, and lightly spray with non-stick baking spray. Set aside.
In a microwave safe bowl, add the white chocolate chips and sweetened condensed milk. In the microwave, melt on high for 1 minute. Stir. Melt for an additional 30 seconds, and stir. Repeat if necessary, until chocolate is completely melted and smooth. Add 1/2 c. coconut flakes, macadamia nuts and coconut extract. Stir to incorporate ingredients.
Using a rubber scraper, evenly press fudge into the prepared pan. Sprinkle the top with the remaining coconut flakes. Refrigerate for at least two hours, or until completely set. Refrigerate or freeze any leftovers.
Notes
Storage: For best results, store the fudge in an airtight container in the refrigerator or freezer. Refrigerated, fudge will keep for up to 2 weeks. When frozen, fudge will last for up to 3 months.
