Ingredients
1 1/2cupssliced cucumbersmini or English work well
1pintabout 2 cups cherry tomatoes, halved
1avocadosliced
1/2cuppickled red onionor fresh red onion
For Cilantro Lime Dressing:
2Tablespoonsfresh cilantrochopped
2Tablespoonsolive oil
Juice of 1 large limeabout 2 Tbsp.
Salt and Pepper
Instructions
In a small bowl, whisk together the dressing by combining the cilantro, olive oil, lime juice, salt and pepper. Whisk and set aside.
In a large bowl, add the sliced cucumbers, halved tomatoes, sliced avocados and sliced pickled red onions. Pour the dressing over the top, and gently dress the salad. Top with additional fresh ground pepper if desired. Serve right away.
Notes
I use and love my Homemade Pickled Onions, which are fantastic in this salad. Instead of pickled red onions, you can also use fresh red onion.Instead of cherry tomatoes you can also use any size or variety of tomato sliced into bite-sized pieces.Refrigerate any leftovers in an airtight container for up to 3 days.
