Heat non-stick skillet over medium heat. Spray with non-stick spray.
In a medium mixing bowl, whisk together the eggs and milk with a whisk. Add in salt and pepper if you prefer. Set aside.
To hot skillet, add the sliced chicken sausage. Brown for 2-3 minutes to heat through, turning the sausage frequently.
Reduce the skillet heat to medium low. Pour the egg mixture over the hot sausage. Sprinkle with the shredded cheese. Using a rubber scraper or spatula, scrape the sides and bottom of the skillet, turning the egg and sausage mixture continuously. Once the eggs are no longer runny, and become fluffy and slightly firm, they are done. This process will take just 1-2 minutes over medium-low heat.
Immediately transfer scramble to a plate and enjoy right away while warm.
