- 1 lb. cooked, shredded chicken
- 2 cups cottage cheese
- 8 oz. reduced fat shredded cheddar cheese or cheddar Jack blend
- 1/3 cup Frank's Red Hot Sauce or your preferred hot sauce
- 1 teaspoon garlic powder
Preheat oven to 400 degrees. Lightly spray a medium casserole dish with non-stick spray. Set aside.
To a mixing bowl, add in all ingredients; shredded chicken, cottage cheese, 1 cup of the shredded cheese (reserving the remainder of the cheese for topping, hot sauce and garlic powder. Mix together well.
Pour the mixture into the prepared casserole dish. Smooth out evenly. Top the dip mixture with the remainder of the shredded cheese.
Place into the oven and bake uncovered for 20-22 minutes at 400 degrees or until the cheese is completely melted and bubbling.
Let the dip cool for 5-10 minutes before serving. Serve with fresh veggies like celery sticks and carrot sticks or tortilla chips. Enjoy hot.
Slow Cooker Instructions:
Don't like cottage cheese curds? Feel free to blend the cottage cheese in the blender or food processor until smooth. This will make a creamier dip.
Storage: Store leftover dip in an airtight container and keep refrigerated. Will keep for up to 5 days in the refrigerator.
Reheating: Reheat in the microwave on medium heat until fully heated through, for about 1 minute per serving.
