Easy Cottage Cheese Buffalo Chicken Dip

Ingredients
  

  • 1 lb. cooked, shredded chicken
  • 2 cups cottage cheese
  • 8 oz. reduced fat shredded cheddar cheese or cheddar Jack blend
  • 1/3 cup Frank's Red Hot Sauce or your preferred hot sauce
  • 1 teaspoon garlic powder

Instructions
 

  • Preheat oven to 400 degrees. Lightly spray a medium casserole dish with non-stick spray. Set aside.
  • To a mixing bowl, add in all ingredients; shredded chicken, cottage cheese, 1 cup of the shredded cheese (reserving the remainder of the cheese for topping, hot sauce and garlic powder. Mix together well.
  • Pour the mixture into the prepared casserole dish. Smooth out evenly. Top the dip mixture with the remainder of the shredded cheese.
  • Place into the oven and bake uncovered for 20-22 minutes at 400 degrees or until the cheese is completely melted and bubbling.
  • Let the dip cool for 5-10 minutes before serving. Serve with fresh veggies like celery sticks and carrot sticks or tortilla chips. Enjoy hot.

Slow Cooker Instructions:

  • Stir all ingredients together in your slow cooker. Heat on low heat for 2-3 hours, or on high for 1 hour. Mixture will be ready to serve with the cheese is fully melted and chicken is fully cooked through. Serve on low/warm setting for a party or gathering.

Notes

Don't like cottage cheese curds? Feel free to blend the cottage cheese in the blender or food processor until smooth. This will make a creamier dip.
Storage: Store leftover dip in an airtight container and keep refrigerated. Will keep for up to 5 days in the refrigerator.
Reheating: Reheat in the microwave on medium heat until fully heated through, for about 1 minute per serving.
