Easy Oven Baked Sausage and Peppers with Sweet Potatoes

Ingredients
2sweet potatoes, largeabout 1 lb. peeled and sliced
2bell peppers, mediumany color, sliced
1red onion, mediumsliced
3Tablespoonsextra virgin olive oildivided
1 ½teaspoonsItalian Seasoning
½teaspoonpepper
1(13 oz. pkg.)chicken sausage, slicedor turkey sausage
Instructions
Preheat oven to 375 degrees.
Peel and slice sweet potatoes into cubes. Cut the bell peppers and onion into bite-sized pieces. Place potatoes, peppers and onion pieces onto the sheet pan. Toss with the olive oil. Sprinkle with the seasoning and pepper. Bake for 20 minutes.
While the sweet potatoes and veggies are baking, slice the sausage into pieces.
Once the sweet potato mixture is done pre-baking, add sausage on top of the sweet potatoes directly on to the sheet pan, keeping everything in an even layer. Return the sheet pan to the oven and bake all ingredients for another 20 minutes at 375 degrees.
Remove from oven and serve right away while warm.

Leftovers will keep for up to 5 days refrigerated.Feel free to use any sausage of your choice (turkey, chicken, beef or pork). Look for nitrate and nitrite free products.Also, feel free to place sausages uncut on the pan for baking.
