– Spring Mix or Romaine Lettuce – Fresh blueberries – Pineapple – Mandarin oranges – Sliced red onion – Grilled chicken – Pineapple – Pecans – Creamy Poppyseed Dressing
To a meal prep container (if making individual salads), add the lettuce to the bottom of the container. Add in 4 oz. of the grilled chicken.
To the container, add in the sliced onion, blueberries, pineapple, oranges and strawberries.
Top the salad with pecans and a sprinkle of poppyseeds. Remember to store your dressing in a separate container when meal prepping salads.
When preparing this salad as an entree, start with the lettuce on the bottom of a platter or bowl. Top with the grilled chicken, fruits, onion, pecans and poppyseeds. Serve with the dressing on the side.
The creamy poppyseed dressing needs just 4 ingredients: - Greek Yogurt - Lemon Juice - Sweetener -Poppyseeds
This salad is also great with a sprinkle of goat cheese crumbles or feta cheese!
