No Bake Cranberry Energy Bites


– 1 1/2 c. raw almonds, ground – 1 1/2 c. old fashioned rolled oats – 2/3 c. good quality almond butter – 2/3 c. sugar free maple flavored syrup, like Lakanto – 1/2 c. sugar free dried cranberries – 1/2 c. No sugar added White Chocolate Chips, like Lily's – 1 tsp. vanilla extract – 1/2 tsp. almond extract (optional)


Step 1

To a blender or food processor, grind the raw almonds by pulsing until they reach a coarse, sand-like consistency. This should take approximately 30 seconds. Pour the ground almonds into a mixing bowl.

Step 2

To the mixing bowl with the ground almonds, add the remaining ingredients: oats, almond butter, maple flavored syrup, sugar free dried cranberries, white chocolate chips, vanilla and almond extracts. Stir together until well combined.

Step 3

Using a tablespoon or medium ice cream scoop, spoon out individual bites and roll together using your hands. Place rolled bites onto a piece of parchment or waxed paper.

Step 4

Bites can be enjoyed right away. You can also refrigerate or freeze, storing in an airtight container.
