The BEST No Bake Lemon Blueberry Cheesecake Bars 

First Step: Make the Crust

You'll Need:  1 1/2 c. Almond Flour 1/4 c. Swerve Confectioners Sugar Substitute 1/4 c. melted butter Mix together, then press into a 9x9" pan. Freeze to set crust.

Next Step: Make the Cheesecake Filling

– 2 packages, cream cheese – 1/2 c. Swerve Confectioners Sugar Substitute – 1 c. heavy whipping cream, divided – 1 envelope, gelatin – 1 tsp. vanilla extract – Juice and Zest of 1 lemon

Next Step: Spread Cheesecake Filling Over Chilled Crust

Spread the filling evenly, then refrigerate overnight or for 6-8 hours.

While the Cheesecake Sets Up, Make the Blueberry Topping

For Blueberry Topping: – 2 c. fresh or frozen blueberries – 1/2 c. Swerve Powdered Sugar Substitute – 2 Tbsp. lemon juice (juice of 1 lemon) – 2 tsp. corn starch

Once Cheesecake has chilled, it's ready to slice and serve! Top each square with blueberry topping.

Slice, top with blueberry topping & Enjoy!
