Easy & Delicious Chicken Tortellini Alfredo

Ingredients:

– 1 1/2 lbs. boneless, skinless chicken breasts – 2 tablespoons extra virgin olive oil – 1/4 teaspoon garlic salt – 1/4 teaspoon ground pepper – 1/4 teaspoon Italian seasoning – 4 cups fresh or frozen broccoli  Alfredo Sauce: – 1/2 cup butter (1 stick) – 2 tablespoons flour – 1 1/2 cup half and half – 1 1/2 cup shredded Parmesan cheese – 1/2 teaspoon garlic salt – 1/4 teaspoon pepper – 1/8 teaspoon ground nutmeg

Step 1: Steam the Broccoli

Place broccoli florets in a microwave safe bowl. Add 1 cup of water and cook for approximately 4 minutes or until the broccoli is tender, but not mushy. You can also steam broccoli in a large skillet.

Step 2: Cook the Chicken

Season the chicken breasts with the garlic salt, pepper and Italian seasoning. Cook the chicken breasts over medium-high heat for 8-10 minutes per side, covering the skillet with the lid when cooking.

Step 3: Make the Alfredo Sauce

In a large non-stick skillet, melt the butter. Add in the flour and whisk. Pour in about 1 cup of the half and half, continually whisking until the sauce begins to thicken. Add the shredded cheese, and continue to whisk until the cheese melts. Add the garlic salt, pepper, nutmeg and the remaining half and half. 

Making homemade Alfredo sauce is needs only 5-10 minutes to make, and is 100% worth it. So much better than store-bought.

Step 4: Add the tortellini & Broccoli to Sauce

Cook the tortellini according to package directions. Add it and the broccoli to the Alfredo sauce.

Step 5: Stir together

Stir the broccoli, tortellini and sauce together to coat well.

Add the Chicken & Enjoy!

Slice the cooked chicken and add it to the top of the pasta, or toss together to coat in the sauce. Enjoy right away!
