- 1 1/2 lbs bone-in pork chops or pork loin chops
Apple Cider Glaze:
- 1/2 cup apple cider or apple juice
- 2 Tablespoons maple syrup
- 1 Tablespoon Dijon mustard
- 1/2 teaspoon crushed red pepper flakes
- 1/2 teaspoon salt
Light your gas or charcoal grill and heat to medium high heat, approximately 400 degrees.
Place the pork chops on a sheet pan or flat work surface. Pat dry with paper towels.
In a small bowl combine the brown sugar, chili powder, garlic powder, salt and pepper. Mix thoroughly with a fork. Mix in the oil to the spice mixture. It will be the consistency of a crumbly paste. Cover the chops on all sides with the spice rub.
For the apple cider glaze:
In a small bowl, prepare the glaze by whisking together the apple cider, maple syrup, Dijon mustard, crushed red pepper flakes, and salt.
Put the spice covered pork chops on the heated grill. Grill for about 6 minutes. Flip the chops and thoroughly brush with the glaze on the cooked side. Grill for about 2 more minutes, flip and brush again with the glaze. Repeat this process until the chops cook for 10-12 minutes total, and reach an internal temperature of 160 degrees.
Storage: Store any leftover pork chops in a resealable container and keep refrigerated. Pork chops will keep for 3-4 days refrigerated.
Different cuts of pork: If using boneless pork loin chops, they will need less time to cook, depending on the thickness. These will need approximately 4-5 minutes per side, with internal temperature reaching 160-165 degrees for doneness.
