In a mixing bowl, whisk together the dry ingredients; flour, collagen, baking powder, sweetener and salt. Add in the milk, egg, vanilla and oil. Whisk together until batter is almost smooth. It's okay if there are a few lumps.
Heat a griddle or frying pan over medium heat. Add a drizzle of coconut oil (avocado oil is also good) if your pan is not non-stick.
Pour out 4" pancakes on the hot pan, and drop in blueberries to each pancake. Let pancakes cook until bubbling through and underside is golden brown. Flip pancakes to cook on opposite side and cook for 1 minute more or until golden brown.
Serve hot right away.
Each serving is approximately 3, 4" pancakes.
If you want to omit the collagen protein, simply substitute 1/4 more oat flour.
