Blueberry Protein Pancakes with Greek Yogurt – 22g of Protein

Looking for a healthy blueberry oatmeal pancakes recipe? These blueberry protein pancakes are a fantastic way to enjoy a big stack without the guilt. Made with no refined sugar and uses oat flour instead of refined grain, these blueberry oat pancakes are a great sugar free and gluten free pancake recipe.

Are you looking for a healthy blueberry pancakes recipe that can keep you on track? For my family and me, Saturday mornings are the time for pancakes, but I don’t want to totally blow my healthy eating plan with a big stack of carb-heavy pancakes covered in butter and syrup.

These blueberry oatmeal pancakes are the perfect solution. Made with no refined sugar or grain, these simple blueberry oat pancakes come together quickly and easily. Great for your weekend brunch plans or, make ahead and freeze for a quick, yummy breakfast for a weekday morning.

What ingredients do I need to make blueberry protein pancakes?

Here’s what you’ll need for this recipe:

  • Oat flour
  • Collage protein (this can be omitted by substituting extra oat flour)
  • Baking powder
  • Salt
  • Almond milk (or your preferred milk – dairy or plant-based)
  • Egg
  • Vanilla extract
  • Granular sweetener – I like to use Lakanto Monkfruit Sweetener.

How do I make oat flour?

Oat flour can be made quickly and easily using simple rolled oats. Add the oats to your blender. Then blend on medium speed until you render a powder or flour consistency. It should take less than 60 seconds.

How do I make blueberry oatmeal pancakes from scratch?

Here are the simple steps to making these healthy blueberry pancakes:

  1. Start by whisking together your dry ingredients; oat flour, collagen protein, baking powder, sweetener and salt. 
  2. Add in the wet ingredients; milk, egg, oil and vanilla.
  3. Whisk all ingredients together until mostly smooth. A few lumps is okay.
  4. Add a drizzle of coconut or avocado oil to a hot griddle or pan, and heat to medium.
  5. Pour out 4″ pancakes and drop in blueberries to each pancake.
  6. Flip each pancake as bottom side browns and batter on top is bubbling through.
  7. Cook on oppose side for 1 minute longer. Transfer to a warm plate or baking dish.

How do I freeze blueberry pancakes?

These blueberry oat pancakes make for a fantastic breakfast meal prep option! Make a big batch on the weekend for breakfast. Place the leftover pancakes into a freezer container separated by sheets of waxed or parchment paper. This helps the pancakes freeze separately and not stick together.

Ready to reheat the pancakes for a quick breakfast? Transfer the frozen pancakes to a toaster oven and toast until warmed through – about 3-5 minutes. My Healthy Breakfast Sandwiches and Baked Egg Cups are also great freeze & reheat healthy breakfast options.

Don’t have a toaster oven? You can also reheat these pancakes in the microwave on the defrost setting.

What can I top pancakes with besides syrup?

Syrup and butter quickly adds calories to your otherwise healthy blueberry oat pancakes. Instead of empty calories, try topping with plain Greek yogurt.

I like to flavor my yogurt using either maple or vanilla extract and some Lakanto Monkfruit Sweetener. Toss on some extra blueberries and a few sliced almonds for some crunch and you’ve got yourself an amazing, protein-packed breakfast!

Ingredients
  

  • 3/4 cup oat flour
  • 1/4 cup unflavored collagen protein
  • 2 Tablespoons granular monk fruit sweetener like Lakanto
  • 2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup almond milk or your preferred milk
  • 1 egg
  • 3 Tablespoons unflavored coconut oil + more for griddle if necessary
  • 1 teaspoon vanilla extract
  • 1 cup blueberries fresh or frozen

Optional Toppings:

  • 1/2 cup Greek Yogurt
  • 1/4 cup fresh blueberries
  • 2 Tablespoons sliced almonds

Instructions
 

  • In a mixing bowl, whisk together the dry ingredients; flour, collagen, baking powder, sweetener and salt. Add in the milk, egg, vanilla and oil. Whisk together until batter is almost smooth. It’s okay if there are a few lumps.
  • Heat a griddle or frying pan over medium heat. Add a drizzle of coconut oil (avocado oil is also good) if your pan is not non-stick.
  • Pour out 4″ pancakes on the hot pan, and drop in blueberries to each pancake. Let pancakes cook until bubbling through and underside is golden brown. Flip pancakes to cook on opposite side and cook for 1 minute more or until golden brown.
  • Serve hot right away.

Notes

Each serving is approximately 3, 4″ pancakes.
If you want to omit the collagen protein, simply substitute 1/4 more oat flour.
