What ingredients do I need to make healthy blueberry pancakes?
Here’s what you’ll need for this recipe:
- Oat flour
- Collage protein (this can be omitted by substituting extra oat flour)
- Baking powder
- Salt
- Almond milk (or your preferred milk – dairy or plant-based)
- Egg
- Vanilla extract
- Granular sweetener – I like to use Lakanto Monkfruit Sweetener.

How do I make oat flour?
Oat flour can be made quickly and easily using simple rolled oats. Add the oats to your blender. Then blend on medium speed until you render a powder or flour consistency. It should take less than 60 seconds.

How do I make blueberry oatmeal pancakes from scratch?
Here are the simple steps to making these healthy blueberry pancakes:
- Start by whisking together your dry ingredients; oat flour, collagen protein, baking powder, sweetener and salt.
- Add in the wet ingredients; milk, egg, oil and vanilla.
- Whisk all ingredients together until mostly smooth. A few lumps is okay.
- Add a drizzle of coconut or avocado oil to a hot griddle or pan, and heat to medium.
- Pour out 4″ pancakes and drop in blueberries to each pancake.
- Flip each pancake as bottom side browns and batter on top is bubbling through.
- Cook on oppose side for 1 minute longer. Transfer to a warm plate or baking dish.

How do I freeze blueberry pancakes?
These blueberry oat pancakes make for a fantastic breakfast meal prep option! Make a big batch on the weekend for breakfast. Place the leftover pancakes into a freezer container separated by sheets of waxed or parchment paper. This helps the pancakes freeze separately and not stick together.

Don’t have a toaster oven? You can also reheat these pancakes in the microwave on the defrost setting.

Healthy Blueberry Pancakes
Equipment

Ingredients
- 3/4 cup oat flour
- 1/4 cup unflavored collagen protein
- 2 Tablespoons granular monk fruit sweetener like Lakanto
- 2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup almond milk or your preferred milk
- 1 egg
- 3 Tablespoons unflavored coconut oil + more for griddle if necessary
- 1 teaspoon vanilla extract
- 1 cup blueberries fresh or frozen
Instructions
- In a mixing bowl, whisk together the dry ingredients; flour, collagen, baking powder, sweetener and salt. Add in the milk, egg, vanilla and oil. Whisk together until batter is almost smooth. It’s okay if there are a few lumps.
- Heat a griddle or frying pan over medium heat. Add a drizzle of coconut oil (avocado oil is also good) if your pan is not non-stick.
- Pour out 4″ pancakes on the hot pan, and drop in blueberries to each pancake. Let pancakes cook until bubbling through and underside is golden brown. Flip pancakes to cook on opposite side and cook for 1 minute more or until golden brown.
- Serve hot right away.
