To a blender or food processor, grind the raw almonds by pulsing until they reach a coarse, sand-like consistency. This should take approximately 30 seconds. Pour the ground almonds into a mixing bowl.
To the mixing bowl with the ground almonds, add the remaining ingredients: oats, almond butter, maple flavored syrup, sugar free dried cranberries, white chocolate chips, vanilla and almond extracts. Stir together until well combined.
Using a tablespoon or medium ice cream scoop, spoon out individual bites and roll together using your hands. Place rolled bites onto a piece of parchment or waxed paper.
Bites can be enjoyed right away. You can also refrigerate or freeze, storing in an airtight container.
