  • 9 x 9 Pan This non-stick 9 x 9" pan is fantastic for no bake desserts, as well as bars, brownies and more!
  • Glass Mixing Bowls These glass mixing bowls are microwave-safe and perfect for making cereal treats.
  • Rubber Scrapers These Cuisinart rubber scraper spatulas are fantastic for fillings, batters, and so much more!

Instructions

  • Lightly spray a 9 x 9" pan in non-stick spray. Set aside. Measure out the cereal to a bowl and set aside.
  • In a large microwave safe bowl, add the marshmallows and butter. Microwave for 1 minute. Stop to stir the mixture using a rubber scraper. Microwave another 30-45 seconds. Marshmallows and butter will be mostly melted. Stir well with the rubber scraper to melt the remaining marshmallows. (I don't recommend heating longer than 2 minutes. This will create hard cereal treats.) Add in the vanilla extract and stir together.
  • To the melted marshmallow mixture, add in the cereal. Mix together well to coat the cereal with the marshmallow mixture. Mixture will be very sticky.
  • Working quickly, pour out the cereal mixture and press into the bottom of the prepared pan. Spray some non-stick spray onto your hands to help prevent the mixture from sticking to your hands. Press the mixture into the pan. Optionally, top the treats with additional Lucky Charms marshmallows.
  • Let treats cool in the pan for 20-30 minutes. Cut into 12 rectangles.

Notes

Storage: Store leftover treats in an airtight container at room temperature. Treats will keep for 5-7 days, covered at room temperature.
Microwave or Stovetop? I recommend using the microwave to melt the marshmallow mixture. You can use a saucepan on a stovetop to melt the marshmallows, HOWEVER, don't overheat the mixture. Overheated marshmallow mixture creates hard, undesirable cereal treats.
Topping: Did you know you can purchase Lucky Charms marshmallows? These make a great topping to the treats. Get a package of Lucky Charms marshmallows from Target here.
