Looking to make marshmallow treats with Lucky Charms cereal? This simple Lucky Charms krispie treats recipe is easily made in the microwave with just 4 simple ingredients.
Lightly spray a 9 x 9" pan in non-stick spray. Set aside. Measure out the cereal to a bowl and set aside.
In a large microwave safe bowl, add the marshmallows and butter. Microwave for 1 minute. Stop to stir the mixture using a rubber scraper. Microwave another 30-45 seconds. Marshmallows and butter will be mostly melted. Stir well with the rubber scraper to melt the remaining marshmallows. (I don't recommend heating longer than 2 minutes. This will create hard cereal treats.) Add in the vanilla extract and stir together.
To the melted marshmallow mixture, add in the cereal. Mix together well to coat the cereal with the marshmallow mixture. Mixture will be very sticky.
Working quickly, pour out the cereal mixture and press into the bottom of the prepared pan. Spray some non-stick spray onto your hands to help prevent the mixture from sticking to your hands. Press the mixture into the pan. Optionally, top the treats with additional Lucky Charms marshmallows.
Let treats cool in the pan for 20-30 minutes. Cut into 12 rectangles.

Storage: Store leftover treats in an airtight container at room temperature. Treats will keep for 5-7 days, covered at room temperature.Microwave or Stovetop? I recommend using the microwave to melt the marshmallow mixture. You can use a saucepan on a stovetop to melt the marshmallows, HOWEVER, don't overheat the mixture.
