In a bowl, add the chopped hard-boiled eggs. Add the mustard, yogurt, salt and pepper. Stir together to incorporate all ingredients.
Add to bread to make an egg salad sandwich, or romaine lettuce leaves for lettuce wraps.
Notes
Storage: When kept refrigerated egg salad will keep in a sealed container for up to 3 days. Store by itself in a container. If adding to bread, do so just before eating.Note: Be sure to NOT use vanilla yogurt. Plain Greek yogurt is recommended.
